How to make Boiled Unripe plantain with Vegetable egg sauce

Boiled plantain with Vegetable egg sauce
Ingredient:


  • 4 ripe plantain
  • 1/2 tsp. Salt
  • Water.
  •  Pumpkin Vegetable (Ugu)
  • ½ cup Vegetable oil 
  • 3 Scotch Bonnet pepper (Red/yellow) 
  • 2 Red Onion 
  • 5 Plum Tomatoes 
  • 1 Seasoning cube, 
  • 1 tsp. Curry powder 
  •  ½ tsp. Thyme 
  • 2 Eggs 


Preparation:

Step 1

  • Wash the plantains with clean water and cut into 2 or 3 depending on the size you want
  • Place the cut plantains into a medium sized pot.
  • Add some water just enough to cover the plantains in the pot and cook on medium heat for 10mins. Add the salt and cook further for 5mins before bringing it down.
  • Remove the skin and serve with Vegetable egg sauce.


Step 2

  • Chop the Scotch bonnet pepper, Onions, Tomatoes, Pumpkin leaves "Ugwu" separately......Set aside. Heat the vegetable oil till hot. 
  • Add the Chopped onion and pepper, Stir-fry for 1 minute. 
  • Add the chopped tomatoes, Salt to taste, 
  • Crushed seasoning, curry powder, thyme. Leave to fry for 3 mins while stirring occasionally. 
  • Break the eggs into the pot and stir to incorporate the mixture. 
  • Add the chopped pumpkin leaves and stir. 
  • Leave to simmer for 3 mins.

Serve with unripe plantain.
