How To Cook Egusi with Water Leaf Soup.(Efo gbure)

Egusi soup is a Nigerian home made soup which has a great taste and a lot of nutritional element when combine with water leaf.

Ingredient:


  • 4 cups egusi
  • 2 kg beef
  • 1 stock fish head
  • 1/2 cup ground crayfish
  • 2 medium sized smoked catfish
  • pepper to taste
  • 1 bunch water leaf
  • 2 tablespoonful palm oil 
  • 1 medium sized onion to steam the beef
  • Salt to taste
  • Seasoning cubes
  • 5 cups water to start with, you add more as you cook to get your desired thickness.


PREPARATION:
  • Steam beef and stock fish with onion, pepper, seasoning and salt till almost tender, 
  • add water and let it boil.
  •  Wash and Cut water leaf and set aside.
  • Mix with little water the ground egusi again in a bowl with some salt 
  •  Add the egusi and palm oil in the boiling stock let it boil before you stir, 
  • Add crayfish and check for taste.  
  • Let soup be completely cooked  
  • Add the smoked catfish and waterleaf. 
  • leave to boil for few minutes 
Serve with some fufu, eba, pounded yam, semo etc...
