Concoction Rice |
Ingredients
2 cups long grain Rice
3 Medium-sized tomatoes
Scotch bonnet pepper
Crayfish (1 handful)
1 Onion Chopped
1/2 teaspoon Curry powder Thyme
1/2 teaspoon Knorr chicken cubes
Salt
Vegetable oil
Method
- Wash the rice with hot water and set aside
- Heat the oil on medium heat for some seconds
- Add the chopped onion and fry for 2 minutes on medium heat
- Add blended tomatoes and peppers
- Let cook for 4 minutes
- Add the curry, thyme and stock cubes
- Pour in the rice and stir in for 3 minutes; add salt to taste
- Add 2 cups of water and cover the pot to let rice simmer on medium heat for 15-20 minutes
- Once water is dried; rice should also be fluffy and not moist.
