Beans and Yam Porridge |
Beans and yam is a healthy Nigerian meal eaten by many. Some people like it hot and some prefer it when it is slightly cool. Whichever way you prefer it, there's no denying the fact that this is one delicious healthy meal. Adding beans to the yam makes it really filling so you eat less yam than you would have if the yam was on its own.
This meal is simple and easy to prepare, you can hardly go wrong.

- 1kg yam piece
- 1 1/2 cups beans, boiled
- 1/2 cup crayfish
- 4 fresh pepper
- 1/2 cup palm oil
- 3 stock cubes
- 1 medium onion
- 2 cloves garlic
- Salt to taste

Method
- Pound or blend the crayfish, garlic, pepper and onions together,and set aside.
- Peel and cut the yam into small pieces, wash and place in a bowl.
- Add some water in the the yam, and set aside
- In a pot wash beans and cook for 45min.
- Add the yam and allow to cook until the yam is soft and tender. Stir occasionally.
- Add the crayfish mix, palm oil, stock cubes and a little salt.
- Add pumpkin
- Cover and allow to cook for about 12 minutes.
Note: The level of thickness will depend on individual preference. If it's too watery for you, allow to cook for a little longer to thicken, but bear in mind that it gets thicker as it cools. If it's too thick, add some water or stock, allow to cook for a few minutes.
Remove from heat and serve.
