Cream of Mushroom Soup

Cream of mushroom soup is a simple type of soup where a basic roux is thinned with cream or milk and then mushrooms and/or mushroom broth are added. It is well known in North America as a common type of condensed canned soup.

Ingredients


  • 2 tablespoons butter
  • 1/2 pound sliced fresh mushrooms
  • 1/4 cup chopped onion
  • 6 tablespoons all-purpose flour
  • 1/2 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 cans (14-1/2 ounces each) chicken broth
  • 1 cup half-and-half cream

Directions 

  • In a large saucepan, 
  • heat butter over medium-high heat
  • saute mushrooms and onion until tender. 
  • Mix flour, salt, pepper and one can broth until smooth; 
  • stir into mushroom mixture. 
  • Stir in remaining broth. 
  • Bring to a boil; cook and stir until thickened, about 2 minutes. 
  • Reduce heat; stir in cream. 
  • Simmer, uncovered, until flavors are blended, about 15 minutes, 
  • stirring occasionally. 

Serve for 6 Enjoy..
